Sudbury Horticultural Society Meeting
Come out and see Stewart and Steven McCall of McGrow Farm speak at the Sudbury Horticultural Society’s meeting on Sunday September 25th at the CNIB Hall 303 York Street, Sudbury. The topics to be discussed include propagation and transplantation.
Market Square Public Consultation
The City of Greater Sudbury invites you to share your thoughts on options for Market Square should the School of Architecture be built on that site. Representatives from the City will provide an overview of the Market and options for 2013 and on. Butternut and Acorn Squash Soup
Ingredients
- 1 butternut squash, halved and seeded
- 1 acorn squash, halved and seeded
- 3 tablespoons butter
- 1/4 cup chopped sweet onion
- 1 quart of vegetable or chicken broth
- 1/3 cup packed brown sugar
- 1 (8 ounce) package cream cheese, softened
- 1/2 teaspoon ground black pepper
- ground cinnamon to taste (optional)
- fresh parsley, for garnish
- Directions
- Preheat oven to 350 degrees F (175 degrees C). Place the squash halves cut side down in a baking dish. Bake 45 minutes, or until tender. Remove from heat, and cool slightly.
- Scoop the pulp from the skins. Discard skins.
- Melt the butter in a skillet over medium heat, and saute the onion until tender.
- In a blender or food processor, blend the squash pulp, onion, broth, brown sugar, cream cheese, pepper, and cinnamon until smooth. This may be done in several batches.
- Transfer the soup to a pot over medium heat, and cook, stirring occasionally, until heated through. Garnish with parsley, and serve warm.
Fun Food Fact of the Week!
Tomatoes are currently one of the most popular fruits (or vegetables) in North America. Originating in the Americas, it was only brought to Europe in the 1600s. Despite being admired for its beauty, the tomato was considered poisonous by Europe’s elite. This was due to the fact that wealthy individuals ate off of pewter flatware, which has a high lead content. Foods high in acid, such as the tomato, would cause lead to leech into the food, causing lead poisoning and eventual death. Poor people on the other hand, loved the fruit, as they ate off of wooden plates. Thus, it was not until the 1800s that the tomato gained widespread popularity.
